The Origin - 8th Century: The macaron's story traces its roots to ancient Persia. The word "macaron" is believed to have been derived from the Persian word "makhsha," meaning "royal" or "noble." These early versions were far from the delicate pastel confections we know today. They were nut-filled, single-layered pastries that eventually found their way to medieval Europe.


Renaissance in France - 16th Century: Macarons evolved when they arrived in France, particularly in the court of Catherine de' Medici. It was in the 16th century that macarons began to take on a form closer to what we recognize now—two almond meringue shells with a filling in between. However, they were still far from being the colorful, double-decker delights we adore.
